Serves: 1
-1 tortilla
-half tomato, diced
-1/4 cup cucumber, diced
-1/2 stick of celery, sliced
-tops cut off of 3 broccoli stalks
-5 olives, sliced
-1 radish, chopped
-as much diced onion/green onion as you like
-couple leaves of lettuce or spinach
-Veganiaise
-Dijon or regular mustard
-Avocado (optional)
-garlic salt
-shredded Parmesan cheese
Spread the mustard, veganaise, and avocado on the tortilla. Sprinkle a bit of garlic salt, then add the veggies. Sprinkle the top with a bit of parmesan cheese and wrap up the tortilla with a toothpick. There can be a million variations on this easy wrap – use your imagination!
